Boil onion and peeled potatoes in salted water, add butter and boil under cover till it’s soft. Blend the boiled soup and squeeze it through the sieve. Season to your taste. Put grated cheese to the bowl, pour hot soup on it, add parsley leaves or lovage. Soup can be served with croutons or puff croutons. To make the dish more original you can add spinach when you boil onion and potatoes, which will enrich the value of the soup.
