Wash nettles and put them into a small amount of boiling salted water. Bring to boiling. Strain the nettles and chop finely with a knife. In a separate saucepan, make bright roux of flour and butter, add the boiled nettles and pour over with the water in which they boiled. Season with salt and garlic.
