Karminadle 'with a surprise inside'

Ingredients:

Karminadle

  • 2 kg minced meat: poultry, pork, beef
  • 1 roll soaked in milk
  • 4 eggs
  • 1 boiled egg
  • 1 onion simmered in oil
  • mushrooms
  • breadcrumb
  • seasoning

Young cabbage with pork scratchings:

  • 1 large young white cabbage
  • 30 dag bacon
  • 1 bunch spring onion
  • seasoning: salt, pepper, vinegar

Turnip cabbage salad:

  • 5 large turnip cabbage
  • 25 dag sour cream
  • 2 tablespoons plain wheat flour
  • seasoning: salt, pepper, vinegar

Rhubarb compote:

  • 1 kg rhubarb
  • 2.,5 l water
  • 30 dag sugar
  • Kisiel powder (type of dessert)

 

Directions:

Karminadle:

Mix minced meat with dry squeezed roll, add eggs and onion, knead. Divide into two portions. Use one to make meatballs with a hard boiled egg inside, the other one with fried mushrooms inside. Roll in breadcrumbs and fry in oil.

Young cabbage with pork scratchings:

Chop cabbage and cook. Drain and add bacon scratchings. Add spring onion and seasoning: pepper, salt and vinegar to taste.

Turnip cabbage salad:

Wash, cut off leaves and grate turnip cabbages coarsely. Cook with some vinegar and salt. Drain when tender, yet leave some liquid in pot. Mix cream with flour and add to turnip cabbage. Cook everything together and season to taste.


Rhubarb compote

Wash and dice rhubarb. Cook until tender in boiling water with sugar. At the end, add kisiel dissolved in 0,5 l water. Serve cold.
