Silesian Bigos (meat and sauerkraut stew) with 'kopytka' dumplings



  • 1,5 kg sauerkraut
  • 1 kg pork blade meat
  • 10 dag lard
  • 5 dag tomato paste
  • 25 dag onion
  • 1 clove garlic
  • 3 dag plain wheat flour
  • salt
  • pepper

Kopytka (dumplings):

  • 1 kg cooked potatoes
  • 30 dag plain wheat flour
  • 1 egg
  • salt



Cook sauerkraut. Fry diced meat and onion, add garlic crushed with salt, flour, tomato paste and season to taste.

Make kopytka dumplings: add egg and flour to pressed potatoes and knead dough. Form 1-inchthick rolls, cut at an angle into bite-size pieces and cook in salted water.
