Buttermilk soup


  • 2 l of buttermilk
  • 200 g of bacon
  • 2 medium-sized onions
  • 200ml of cream
  • 2 cloves of garlic
  • 1 bay leaf
  • 3 grains of allspice
  • a pinch of marjoram
  • pepper
  • 250 ml of vegetable stock
  • 2 spoons of lard



Boil the buttermilk for ca. 20 min., drain it to remove the cottage cheese from the whey, which is the basic ingredient of the soup. Cut the bacon and onions into cubes, brown them with lard, and then add seasoning and pour the whey. Add the stock and the cream.
