Swallow nests

Ingredients:

  • 4 chops of boneless beef
  • 6 eggs
  • 60 dag minced pork
  • 2 medium size onions
  • 2 small leeks
  • 25 dag margarine
  • 2 tablespoons plain wheat flour
  • 1 glass sour cream
  • salt
  • pepper
  • mustard

Aunt Elwira’s roll dumplings:

  • 12 stale bread rolls (the ones with cross pattern on them)
  • 4 eggs
  • 2 glasses milk
  • 50 dag plain wheat flour
  • salt
  • ground pepper
  • nutmeg
  • dried vegetable seasoning mix
  • 2 teaspoonfuls chopped parsley
  • 2 teaspoonfuls chopped dill

Red cabbage salad

  • 1 medium size red cabbage
  • 1 medium size onion
  • 7dag smoked bacon
  • 1 apple
  • salt
  • ground pepper
  • sugar
  • vinegar

 

White cabbage with mayonnaise

  • 1 medium size white cabbage
  • 1 medium size onion
  • mayonnaise
  • salt
  • ground pepper
  • sugar
  • chopped parsley

 

Directions:

Swallow nests

Wash meat chops. Beat well on one side. Combine minced pork with finely chopped onion, leek, two eggs, salt and pepper to taste. Boil the other four eggs hard and shell them. Smear mustard and sprinkle a little bit of salt on the beaten side of chops, sprinkle with a bit of salt. Cover with 1 cm thick layer of seasoned minced meat, leave edges uncovered. Place an egg in the middle of each chop. Pull edges together and tie with white thread. Fry in well-heated fat. When well browned, baste with water or stock and stew until tender. When the nests are ready, remove them and thicken sauce with a little bit of flour and water mixture, bring to boil stirring all the time. Remove from heat. Pour some of hot sauce in cream and pour back to the rest of sauce stirring all the time. Season with salt to taste. Cut the nests into halves to get sections with egg halves visible inside.

Aunt Elwira’s roll dumplings

Prepare pancake crepe batter from milk, flour, eggs and a pinch of salt, but make it a bit thicker. Dice rolls quite finely. You can brown them. Pour batter over diced rolls. Add greens and seasoning and stir well until roll pieces absorb all batter moist. Form a peach-sized ball with moist hands. Put it into boiling salted water, bring to boil again and leave for half an hour keeping temperature of water on the verge of boiling.

Red cabbage salad

Wash cabbage and shred finely, cook half-tender in boiling water. Drain and place in saucepan, add chopped onion and rendered bacon. Season with salt, pepper, vinegar and sugar. Remove from heat and add finely chopped or grated apple. Stir again and serve hot or cold.

White cabbage with mayonnaise

Shred cabbage finely and put into boiling water. After bringing to boil again, drain it on colander pressing with wooden spoon. Add finely chopped onion, salt, sugar, pepper to taste, mix well and leave to cool. Add mayonnaise and chopped greens, mix and season to taste. Serve cold.

Tradition: Jaskółcze gniazda (swallow nests) made from minced meat, just like minced meat patties (karbinadels), were served in middle-class Silesian families as everyday dishes. On holidays, besides roulades, swallow nests were served in a different version - wrapped in slices of beef.
