Game roll, dumplings and red cabbage with bacon

Ingredients:

Game rolls:

  • 1 kg venison
  • 40 dag smoked bacon
  • mustard
  • 6 pickled cucumbers
  • onion
  • spices
  • cream
  • flour

Cabbage:

  • red cabbage
  • 1 onion
  • 25 dag smoked bacon
  • 2 big wine-flavoured apples
  • salt
  • pepper

Dumplings:

  • 2 kg potatoes
  • 2 eggs
  • potato flour

 

Directions:

Meat:

Slice, tenderise, season and spread the meat with mustard. Put rashers of bacon, sliced pickled cucumbers and onion on the prepared meat. Roll everything and simmer. When done, strain gravy and thicken it with cream and flour.

Cabbage:

Shred, boil and strain the cabbage. Then, pour vinegar over it, add chopped onion and season to taste. Serve with fried smoked bacon.

Dumplings:

Boil and mash ¼ potatoes, and grate and drain the rest. Mix the potatoes, add potato flour and knead dough. Form small dumplings and boil them in salted water.

 

 

This meal was prepared by the Village Women's Club from Wisła Wielka during the 4th “Silesian Tastes Festival 2009” in Pszczyna. The Team won 2nd place in amateur category.
